  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh thyme, chopped
  • 2 cups cherry tomatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp balsamic vinegar
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1/2 cup heavy cream
  • 1/4 cup Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter

Instructions

  1. Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, pepper, balsamic vinegar, and minced garlic; spread on a baking sheet and roast for 20 minutes.
  2. Pat cod fillets dry; season with olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and lemon juice.
  3. Heat grill or grill pan over medium-high heat; cook cod for 3-4 minutes per side until golden and flaky.
  4. For the creamy dill sauce: melt butter in a saucepan over low heat; stir in heavy cream, Greek yogurt, Dijon mustard, dill, lemon zest, salt, and black pepper. Simmer for 2-3 minutes.
  5. Assemble: Place roasted tomatoes in a bowl, top with grilled cod, drizzle with dill sauce, and garnish with parsley.
