  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for rice)
  • 1 cup long-grain rice, rinsed
  • 2 cups chicken broth
  • 1/4 cup lemon juice (for rice)
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill (for rice)
  • Salt and pepper to taste (for rice)
  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber, peeled, seeded, and grated
  • 1 clove garlic, minced (for tzatziki)
  • 1 tablespoon lemon juice (for tzatziki)
  • 1 tablespoon olive oil (for tzatziki)
  • 1 tablespoon chopped fresh dill (for tzatziki)
  • Salt and pepper to taste (for tzatziki)
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, peeled, seeded, and diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • Fresh parsley, chopped, for garnish
  • Pita bread or naan, warmed (optional)

Instructions

  1. Marinate the chicken by whisking together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Toss in the chicken cubes and refrigerate for at least 30 minutes.
  2. Rinse the rice until the water runs clear. In a medium saucepan over medium heat, warm olive oil before adding the rice. Stir for 1-2 minutes until slightly toasted. Then, add chicken broth and lemon juice, bring to a boil, lower the heat, and simmer for about 18-20 minutes until fluffy.
  3. For tzatziki sauce, grate the cucumber and squeeze out any extra liquid. Combine it with Greek yogurt, minced garlic, lemon juice, olive oil, and dill. Season with salt and pepper, then cover and chill in the fridge.
  4. Cook the marinated chicken on a grill or in the oven until fully cooked, about 8-10 minutes on the grill or 15-20 minutes at 400°F.
  5. Assemble bowls by dividing the lemon-herb rice among serving bowls. Top with grilled chicken, cherry tomatoes, cucumbers, red onion, Kalamata olives, and tzatziki sauce. Sprinkle crumbled feta cheese and fresh parsley on top before serving with warm pita bread or naan.
