  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C). Clean the russet potatoes thoroughly and poke holes all over each one with a fork.
  2. Bake the potatoes directly on the oven rack or on a baking sheet for about 45 minutes until tender.
  3. Once cooled slightly, cut each potato in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch around the edges.
  4. Brush each potato skin with olive oil and season with garlic powder, oregano, thyme, salt, and pepper.
  5. Place the seasoned skins back in the oven on a baking sheet and roast for an additional 15-20 minutes until golden brown and crispy.
