  • 2 tablespoons granulated sugar
  • 12 tablespoons cold unsalted butter (cut into pieces)
  • ¼ cup cold water
  • lbs baking apples (about 3 large)
  • ⅓ cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons melted unsalted butter
  • 1 egg (beaten)
  • Turbinado sugar (for topping)

Instructions

  1. Preheat oven to 350°F.
  2. In a food processor, combine flour, salt, and sugar. Add cold butter and pulse until mixture resembles small peas.
  3. Sprinkle cold water over the mixture and pulse until crumbly but holds together when pressed. Form into a disk and refrigerate for at least 30 minutes.
  4. Peel, core, and thinly slice apples. Toss them with sugar, vanilla, cinnamon, melted butter, and salt in a bowl.
  5. Roll out the chilled dough on parchment paper into a circular shape about 14 inches wide.
  6. Arrange apple slices on the dough in concentric circles and fold the edges over the apples.
  7. Brush edges with beaten egg and sprinkle turbinado sugar on top.
  8. Bake for 55-65 minutes until apples are tender and crust is golden brown.
