  • pounds white fish, such as cod, halibut, or tilapia, skin removed and cut into 4 equal pieces
  • 4 tablespoons unsalted butter, cut into 4 pieces
  • 6 cloves garlic, chopped
  • ⅓ cup fruit juice (such as white grape juice)
  • 1 (28-ounce) can whole tomatoes, preferably San Marzano, crushed
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ cup black or Castelvetrano olives, halved and pitted
  • 2 tablespoons capers, drained
  • ¾ teaspoon sea salt
  • ¼ cup chopped fresh basil or flat leaf parsley (optional)
  • Red pepper flakes (optional)
  • Garlic bread, store-bought or homemade (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. In a large ovenproof skillet over medium heat, melt the butter. Add chopped garlic; sauté for 1-2 minutes until fragrant.
  3. Stir in dry white grape juice and let it simmer for 4 minutes. Add crushed tomatoes, oregano, and thyme; simmer for 10 minutes.
  4. Mix in olives and capers.
  5. Season the fish with sea salt and carefully place into the sauce. Bake in the oven for 8-10 minutes until the fish flakes easily.
  6. Serve hot with fresh herbs on top if desired.
