  • 675 grams (3 medium) zucchinis
  • 150 grams (1 cup + 1 tbsp) crumbled feta cheese
  • 90 grams (½ cup) strained Greek yogurt
  • 40 grams (½ cup) grated Gruyere cheese
  • 20 grams (1 medium) spring onion
  • ½ lemon zest
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 200°C / 390°F.
  2. Wash the zucchinis and cut them in half lengthwise; scoop out some flesh to create space for the filling.
  3. In a large bowl, mix together the feta cheese, Greek yogurt, spring onion, Gruyere cheese, lemon zest, garlic powder, parsley, olive oil, and oregano until well combined.
  4. Generously fill each zucchini half with the mixture and drizzle with extra olive oil.
  5. Place on a baking tray and bake for about 45 minutes until tender and golden brown.
