  • 2 fish fillets (such as cod or tilapia)
  • 1 cup cherry tomatoes
  • ½ cup pitted olives
  • 1 medium onion (diced)
  • 1 zucchini (diced)
  • 6 sprigs thyme (chopped)
  • 3 sprigs rosemary (chopped)
  • 1 tsp oregano (dried)
  • 2 tsp parsley (chopped or dried)
  • 4 garlic cloves (minced or chopped)
  • 1 tsp basil (chopped, optional)
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tbsp sweet chili sauce
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup olive oil

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, mix marinade ingredients: chopped herbs, garlic, lemon juice and zest, sweet chili sauce, salt, pepper, and olive oil. Rub half on both sides of the fish fillets.
  3. Coat diced onion, zucchini, cherry tomatoes, and olives in the remaining marinade.
  4. In a greased baking dish, layer the marinated veggies and top with fish fillets. Drizzle any leftover marinade over the fish.
  5. Bake for about 15 minutes until fish is flaky and reaches an internal temperature of 145°F.
  6. Allow resting for 5 minutes before serving.
