  • ¼ cup powdered sugar
  • 1 cup flour
  • Pinch of salt
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ teaspoon baking powder
  • 3 tablespoons lemon juice
  • Zest of ½1 lemon (½1 tablespoon)

Instructions

  1. Preheat your oven to 350F (180C) and lightly grease an 8×8 inch square pan.
  2. In a bowl, mix softened butter, powdered sugar, flour, and salt until crumbly. Press into the bottom of the prepared pan.
  3. Bake the crust for about 15 minutes or until lightly golden.
  4. In another bowl, whisk together eggs, granulated sugar, baking powder, lemon juice, salt, and zest.
  5. Pour the filling over the baked crust and bake for an additional 30 minutes until set but slightly jiggly in the center.
  6. Cool completely before slicing into squares.
