  • 1 large onion, finely diced
  • 2 cups celery, finely chopped (about 34 stalks)
  • 2 tbsp sage, finely chopped
  • 2 tbsp thyme, finely chopped
  • 1 tbsp rosemary, finely chopped
  • 4 cups low-sodium chicken or vegetable broth
  • ½ cup unsalted butter, melted
  • Salt and pepper to taste

  1. Prepare the bread by cubing it and allowing it to sit out for a few hours or overnight to become slightly stale.
  2. In a large skillet over medium heat, melt the unsalted butter. Add diced onion and chopped celery; sauté for about 5-7 minutes until softened.
  3. In a large bowl, combine the cubed bread with the sautéed vegetables and fresh herbs. Pour in the broth and mix gently until all bread cubes are evenly moistened. Season with salt and pepper.
  4. Preheat oven to 350°F (175°C). Transfer the mixture to a greased baking dish, cover with foil, and bake for about 30 minutes. Remove foil for the last 15 minutes to achieve a crispy top.
