  • 4 tablespoons Thai red curry paste
  • 3 cloves garlic, finely chopped
  • 1 tablespoon chopped ginger
  • 1 tablespoon chopped lemongrass or paste (optional)
  • 3 cups chicken broth
  • 14 ounces coconut milk from a can
  • 1 pound frozen dumplings (such as potstickers or wontons)
  • 1 cup spinach, chopped
  • 2 green onions, sliced
  • 1 tablespoon cilantro leaves, chopped
  • 1 lime

Instructions

  1. Heat oil in a large pot over medium heat. Sauté diced onion until translucent.
