  • 6 tablespoons melted butter
  • 1/4 cup sugar
  • 1 teaspoon unflavored vegan gelatin
  • 2 tablespoons cold water
  • 4 ounces white chocolate chips
  • 2 1/2 tablespoons milk
  • 1 tablespoon powdered sugar
  • 1 cup heavy whipping cream
  • 34 drops pure peppermint oil
  • 1/4 cup heavy whipping cream (for the glaze)
  • 3 1/2 ounces bittersweet or dark chocolate
  • 2 teaspoons light corn syrup
  • 2 tablespoons very warm water

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a bowl, combine ground graham crackers, melted butter, and sugar. Press mixture into a tart pan.
  3. Bake for about 10 minutes until set, then allow to cool.
  4. Bloom the vegan gelatin in cold water for five minutes, then dissolve in the microwave.
  5. Melt white chocolate and mix with milk, dissolved gelatin, and peppermint oil; let cool.
  6. Whip heavy cream with powdered sugar until medium-stiff peaks form; fold into the cooled chocolate mixture.
  7. Fill the cooled crust with mousse and chill for at least three hours.
  8. For the glaze, heat cream and stir in dark chocolate until smooth; pour over chilled tart and let set.
