  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup gruyere cheese (or more cheddar)
  • ¼ cup grated parmesan

Instructions

  1. Preheat the oven to 375°F and grease your baking dish.
  2. Layer thinly sliced potatoes and onions in the dish.
  3. In a saucepan, melt butter over medium heat; whisk in flour and almond milk until smooth.
  4. Stir in cheddar cheese, garlic powder, salt, and pepper until melted and creamy.
  5. Pour the sauce over the potato layers evenly.
