  • 1/2 cup softened butter
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 2 & 1/3 cups flour
  • 5 tbsp butter (for topping)
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1 tsp vanilla extract
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Add in the egg and vanilla extract; mix until fully combined.
  4. Gradually incorporate flour, salt, and baking powder until just combined.
  5. Scoop out nine cookie balls onto the prepared sheet, gently flattening each one. Press down in the center to create space for the pecan topping.
  6. Bake for 8-9 minutes until edges are lightly golden but centers remain soft. Allow cooling on the sheet before transferring to a wire rack.
