  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese (or nutritional yeast for a dairy-free option)
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil the carrot rounds in salted water for about 10–12 minutes until fork-tender.
  3. Drain and cool slightly before smashing each round on the prepared baking sheet with the bottom of a glass.
  4. Drizzle olive oil over the smashed carrots; season with garlic powder, smoked paprika, salt, pepper, and sprinkle with Parmesan.
  5. Roast in the oven for 20–25 minutes, flipping halfway through until crispy and golden.
  6. Serve hot, garnished with fresh parsley.
