  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Red chili flakes (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes; cook for 8-10 minutes until golden brown and tender. Remove from skillet and set aside.
  3. In the same skillet, sauté the chopped onion and bell pepper for 3-4 minutes until softened.

  5. Season with smoked paprika, dried thyme, salt, pepper, and optional red chili flakes. Return cooked potatoes to the skillet; mix gently for another 2-3 minutes before serving with fresh parsley on top.
