  • 1 tablespoon tomato paste
  • 6 cups water
  • 8 oz tortellini (three-cheese or other preferred)
  • 4 oz fresh spinach
  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • 4 tablespoons fresh thyme

Instructions

  1. Heat olive oil in a large pot over medium heat. Add crumbled sausage and cook until browned.
  2. Drain excess grease; season with Italian seasoning and paprika.
  3. Stir in sweet potato, garlic, red pepper flakes, and tomato paste.
  4. Pour in water; bring to a boil while stirring to dissolve tomato paste.

  6. Add tortellini; cover and boil for about 10 minutes until al dente.
