  • 2 Chicken Breasts
  • 1/4 cup Flour
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1 tbsp Olive Oil
  • 1 tbsp Butter
  • 9oz Baby Button Mushrooms (sliced thin)
  • 3/4 cup Heavy Cream
  • 3/4 cup Chicken Stock
  • 1oz Parmesan Cheese (freshly grated)
  • 2 large cloves Garlic (finely diced)
  • 1 tbsp Fresh Parsley (finely diced)
  • 1 tbsp Fresh Chives (finely diced)
  • 1 tbsp Butter (to fry the mushrooms)
  • 1/21 tsp Lemon Juice
  • Salt & Pepper (to taste)

Instructions

  1. Slice each chicken breast horizontally into two even pieces.
  2. In a shallow dish, mix flour, garlic powder, salt, and black pepper; dredge chicken pieces in this mixture.
  3. Heat olive oil and butter in a pan over medium-high heat; cook chicken until golden brown on both sides (about 4-5 minutes per side).
  4. Remove chicken from the pan; add sliced mushrooms and sauté until golden.
  5. Add minced garlic and cook briefly before pouring in chicken stock and cream; simmer for 5 minutes.
  6. Stir in Parmesan cheese, return chicken to the pan, and season with lemon juice, salt, and pepper before serving.
