  • 16 oz medium portobello mushrooms
  • 1 tbsp olive oil
  • 1/2 cup finely chopped onion
  • Diced mushroom stems
  • 2 garlic cloves
  • 4 oz crab meat
  • 4 oz cream cheese (softened)
  • 1 egg
  • 1/4 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • Fresh herbs (parsley and chives)

Instructions

  1. Preheat oven to 375°F and grease a baking dish.
  2. Rinse mushrooms and remove stems; save for filling.
  3. Sauté onion and diced stems in olive oil until caramelized; add garlic until fragrant.
  4. In a bowl, combine crab meat, cream cheese, egg, sautéed veggies, bread crumbs, Parmesan, parsley, chives, salt, and pepper.
  5. Fill mushroom caps generously with the mixture.
  6. Sprinkle extra Parmesan on top.
  7. Bake for 20 minutes until golden.
