  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp sour cream (or Greek yogurt)
  • 1 tsp cinnamon (for crumb topping)
  • 1 cup flour (for crumb topping)
  • 1 cup brown sugar (for crumb topping)
  • 6 Tbsp butter (cold, for crumb topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 8×4 inch pans.
  2. In a bowl, mash bananas with brown sugar, vanilla extract, and cinnamon.
  3. In another bowl, cream together softened butter and sugar until fluffy.
  4. Beat in eggs one at a time.
  5. Sift in flour, baking soda, and salt; mix until just combined.
  6. Stir in sour cream and then fold in the mashed bananas.
  7. Prepare the crumb topping by combining flour, brown sugar, and cold butter; mix until crumbly.
  8. Pour batter into prepared pans and sprinkle crumb topping on top.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
