  • 300g treacle
  • 225g unsalted butter
  • 250g whole milk
  • 300g all-purpose flour
  • 180g granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 Tbsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp mixed spice or pumpkin pie spice
  • 1/2 tsp nutmeg
  • 1/2 tsp cardamom
  • 2 large eggs

Instructions

  1. Preheat the oven to 300°F (150°C) and prepare a loaf pan by greasing it and lining it with parchment paper.
  2. In a medium saucepan, melt together treacle and butter over medium heat, stirring occasionally. Once melted, remove from heat and add cold milk; let cool for about ten minutes.
  3. In a large bowl, sift together flour, sugar, baking soda, baking powder, salt, and spices.
  4. Whisk eggs into the cooled treacle mixture until fully incorporated.
  5. Pour wet ingredients into dry ingredients and whisk until smooth.
  6. Transfer batter to the prepared loaf pan, spreading evenly.
  7. Bake for about one hour and twenty minutes or until a skewer inserted comes out clean.
  8. Let cool in the pan before transferring to a wire rack.
