  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) cocoa powder (Dutch process)
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla bean paste or extract
  • 1 cup (200 g) semi-sweet chocolate chips
  • 1/2 cup (120 ml) heavy whipping cream
  • Nonpareils for sprinkling on top

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour, cocoa powder, salt, and baking powder.
  2. In another bowl, cream together the softened butter, light brown sugar, and granulated sugar until it's light and fluffy.
  3. Mix in the egg yolks and vanilla bean paste or extract until well combined.
  4. Gradually add your dry mixture to the wet ingredients. Stir until everything is just combined—don’t overmix!
  5. Scoop out small portions of dough and roll them into balls about one inch in diameter. Place them on a lined baking sheet. Press your thumb gently into each ball to create an indent.
  6. Bake in your preheated oven for about 10 minutes. The cookies should look set but still soft in the center.
  7. Heat heavy whipping cream over medium heat until just simmering. Pour it over semi-sweet chocolate chips and let it sit for a minute before stirring until smooth.
  8. Fill each thumbprint with ganache using a spoon or piping bag.
  9. If desired, sprinkle nonpareils on top of each filled cookie.
