  • 220 millilitres Whole milk
  • 1 packet (11 grams) Fast-action dried yeast
  • 50 grams Caster sugar
  • 1 medium Egg (room temperature)
  • 1 medium Egg yolk (room temperature)
  • 460 grams Strong white bread flour (plus more for dusting)
  • 50 grams Cocoa powder
  • 1 teaspoon Salt
  • 60 grams unsalted butter (room temperature)
  • 120 grams light brown sugar/muscovado sugar
  • 4 teaspoons ground cinnamon
  • 1 large Orange (zest only)
  • 50 grams Milk chocolate
  • 75 grams Full-fat cream cheese (room temperature)
  • 50 grams Icing sugar
  • 1 large Orange (juice only)

Instructions

  1. Melt unsalted butter and warm whole milk together; combine with yeast and let sit until frothy.
  2. Whisk strong white bread flour, cocoa powder, caster sugar, and salt in a bowl. Create a well in the center.
  3. Add egg, egg yolk, and yeast mixture to dry ingredients; mix into a sticky dough and knead for 8-10 minutes.
  4. Place in an oiled bowl, cover, and let rise until doubled (1-2 hours).
  5. Prepare filling by mixing softened butter, brown sugar, cinnamon, and orange zest.
  6. Roll out dough into a rectangle, spread filling evenly, roll tightly into a log, and slice into 10 pieces.
  7. Place cut-side up in greased trays; let rise again while preheating oven to 180°C (350°F).
  8. Bake for about 20 minutes until golden brown.
  9. Prepare frosting by melting milk chocolate and mixing with cream cheese, icing sugar, and orange juice; drizzle over cooled rolls.
