  • 4 tablespoons unsalted butter (melted)
  • 24 oz cream cheese (room temperature)
  • 1 cup white granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 8 oz chocolate bar (melted)
  • 1/2 cup heavy cream (room temperature)
  • 1 teaspoon pure vanilla extract
  • 4 large eggs (room temperature)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Combine Oreo crumbs and melted butter in a bowl until it resembles wet sand. Press into the bottom of a greased 9×13 inch baking dish.
  2. In another bowl, beat cream cheese and sugar until smooth. Add melted chocolate, cocoa powder, heavy cream, and vanilla extract; mix well.
  3. Incorporate eggs one at a time, mixing after each addition. Fold in semi-sweet chocolate chips.
  4. Pour cheesecake mixture over crust and spread evenly. Bake for about 45 minutes until slightly jiggly in the center.
  5. For the ganache topping, heat heavy cream until simmering; remove from heat and stir in chopped chocolate until smooth. Pour over cooled cheesecake bars.
  6. Chill in the refrigerator for at least four hours before cutting into squares and serving.
