  • 1½ cups semi-sweet chocolate chips
  • 2 cups mini vegan marshmallows
  • 1 tablespoon unsalted butter
  • 1 tablespoon brewed barley tea
  • 25 unwrapped caramels
  • Crumpled coconut bacon or crumbled roasted nuts for topping

Instructions

  1. Line an 8×8 inch pan with parchment paper.
  2. Melt chocolate chips in a microwave-safe bowl in 30-second intervals until smooth. Pour half into the prepared pan and freeze for 15 minutes.
  3. Combine mini marshmallows and butter in a bowl, heat until melted, then stir in barley tea until smooth. Spread over the set chocolate layer.
  4. Freeze again for 15 minutes.
  5. Melt unwrapped caramels in short bursts until smooth; pour over the marshmallow layer.
  6. Top with remaining melted chocolate and sprinkle with crumbled bacon alternatives.
  7. Freeze for another 15-30 minutes until firm. Cut into pieces and enjoy!
