  • 1 1/2 tablespoons olive oil

  • 2 cloves garlic (finely minced)
  • 1 teaspoon chili powder
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon fresh chopped cilantro
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 2 red bell peppers (sliced into strips)
  • 1/2 large red onion (sliced into strips)
  • 1 batch cilantro lime rice
  • 1 cup corn
  • 1 avocado
  • 2 tablespoons mayo
  • 1/4 cup Greek yogurt
  • 12 tablespoons sriracha (or to taste)
  • 2 teaspoons honey
  • pinch of salt
  • 12 tablespoons water (as needed to thin)

Instructions

  1. Whisk together marinade ingredients: lime juice, olive oil, honey, garlic, chili powder, red pepper flakes, cilantro, and salt.
  2. Marinate salmon in the mixture for at least 15 minutes.
  3. Preheat oven to 375°F (190°C). Bake marinated salmon on a parchment-lined sheet for 10-15 minutes until cooked through.
  4. Sauté sliced bell peppers and onions in olive oil over medium heat until caramelized (5-10 minutes).
  5. Mix dressing ingredients until smooth; adjust consistency with water if needed.
