  • 9 lasagna noodles (cooked al dente)
  • 4 cups shredded rotisserie chicken
  • 4 Tbsp unsalted butter
  • 1 medium onion (finely chopped)
  • 5 oz fresh spinach (coarsely chopped)
  • 15 oz ricotta cheese
  • 3 cups mozzarella cheese (divided)
  • 2 ½ cups chicken broth
  • 1 large egg
  • 1/3 cup all-purpose flour

Instructions

  1. Heat olive oil in a skillet over medium heat; sauté onion until translucent (about 5 minutes).
  2. Add butter and garlic; once melted, whisk in flour until smooth.
  3. Gradually add chicken broth, whisking continuously until thickened (about 5 minutes).
  4. Stir in half-and-half, spinach, sea salt, and black pepper; remove from heat.
  5. In a bowl, mix ricotta with egg, parsley, and parmesan until creamy.
  6. Layer in a baking dish: start with some sauce, then three noodles, half the chicken, half the ricotta mixture. Repeat layers and top with remaining noodles, sauce, and mozzarella.
  7. Preheat oven to 350°F (175°C) and bake uncovered for about 45 minutes until bubbly.
