  • 1½ cups graham cracker crumbs
  • ¼ cup ground pistachios
  • 3 tbsp sugar
  • 5 tbsp melted butter
  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 2 large eggs
  • ½ cup sour cream
  • ¼ cup pistachio pudding mix (dry powder)
  • 1 tsp vanilla extract
  • 1 can (21 oz) cherry pie filling
  • Optional: extra chopped pistachios for garnish

Instructions

  1. Preheat the oven to 325°F (160°C) and prepare a 9-inch springform pan.
  2. In a mixing bowl, combine graham cracker crumbs, ground pistachios, sugar, and melted butter. Stir until well mixed and press into the bottom of the pan. Bake for 8 minutes.
  3. In another bowl, beat together softened cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, pudding mix, and vanilla until just combined.
  4. Pour the filling over your cooled crust and smooth out the top. Bake for 45–50 minutes or until the center is just set with a slight jiggle.
  5. Cool in the oven with the door cracked open to prevent cracking and refrigerate for at least 4 hours or overnight.
  6. Top with cherry pie filling before serving.
