  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel tomatoes
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion; cook until beef is browned and onions are translucent (8–10 minutes).
  2. Stir in minced garlic and taco seasoning; cook for another 30 seconds.
  3. Add beef broth, Rotel, and tomato paste; bring to a boil.
  4. Stir in rice; return to a boil, then cover and reduce heat to low. Simmer for about 15 minutes.
  5. Sprinkle cheese on top; cover and cook for an additional 5 minutes until cheese melts.
  6. Serve with your favorite toppings like sour cream or guacamole.
