  • 2 cups ziti pasta (cooked)
  • 1 tablespoon extra-virgin olive oil
  • 1 pound ground beef
  • 3 cloves garlic (minced)
  • 1 onion (chopped)
  • 2 tablespoons tomato paste
  • 2 cups shredded mozzarella cheese
  • Fresh parsley (for garnish)

Instructions

  1. Cook the ziti according to package directions, but reduce cooking time by one minute. Reserve half a cup of pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Add the ground beef and brown it for about two minutes, breaking it apart as it cooks.
  3. Lower the heat and season with salt and pepper. Stir in minced garlic, chopped onion, tomato paste, and half of the reserved pasta water. Simmer for 8 to 10 minutes until tender.
  4. Combine cooked pasta with the meat mixture and stir in one cup of mozzarella cheese until well mixed. Sprinkle remaining cheese on top, cover, and let sit until melted.
  5. Garnish with fresh parsley before serving.
