  • 2 tbsp (25 g) granulated white sugar
  • 2 eggs, whisked
  • 1 tbsp vanilla extract
  • 1/2 cup (112 g) unsalted butter, very softened
  • 1/3 cup (80 ml) heavy cream
  • 2 chai tea bags
  • 1/2 cup (112 g) unsalted butter, very softened for filling
  • 1 cup (220 g) light brown sugar, packed
  • 1 1/2 tsp ground cinnamon for filling
  • 3/4 tsp ground ginger for filling
  • 1/4 tsp ground allspice for filling
  • 1/4 tsp ground nutmeg for filling
  • 3/4 tsp ground cardamom for filling
  • 1/8 tsp ground cloves for filling
  • 1/3 cup (116 g) honey
  • 1 1/2 tsp vanilla extract for filling
  • 1/4 tsp salt for filling
  • 6 tbsp (84 g) unsalted butter, very softened for topping
  • 6 oz (170 g) cream cheese, softened
  • 3/4 cup (97 g) powdered sugar
  • 1 1/2 tsp vanilla extract for topping
  • 1/2 tsp ground cinnamon for topping
  • 1/4 tsp ground ginger for topping
  • 1/8 tsp ground allspice for topping
  • 1/8 tsp ground nutmeg for topping
  • 1/4 tsp ground cardamom for topping
  • A pinch of cloves for topping

Instructions

  1. Warm milk to 110°F and mix with yeast and sugar; let bloom for 5-10 minutes.
  2. In a bowl, whisk together flour, spices, and salt.
  3. Combine bloomed yeast mixture with eggs and butter; mix into dry ingredients to form soft dough.
  4. Knead dough on a floured surface for 5-8 minutes until smooth.
  5. Let the dough rise in a greased bowl for about an hour or until doubled in size.
  6. Prepare the filling by steeping chai tea bags in heavy cream; then mix with softened butter, brown sugar, and spices.
  7. Roll out dough into a rectangle, spread filling evenly, roll tightly into a log, and cut into pieces.
  8. Place cut rolls in a greased baking dish and let rise again for 30 minutes.
  9. Bake at 350°F for 25-30 minutes until golden brown.
  10. While baking, make frosting by mixing cream cheese, butter, powdered sugar, vanilla extract, and spices until smooth.
  11. Drizzle frosting over warm rolls before serving.
