Carolina Shrimp & Grits is a delightful Southern classic that brings warmth and comfort to your table. This satisfying dish features creamy stone-ground grits topped with tender shrimp, all enhanced by a savory chicken broth sauce.

  • 180 g stone-ground grits
  • 720 ml water
  • 240 ml whole milk
  • 1 tsp salt
  • 60 g sharp cheddar cheese, grated
  • 2 tbsp unsalted butter
  • Black pepper, to taste
  • 450 g large shrimp, peeled and deveined
  • Salt and pepper, to taste
  • 1 tsp Cajun seasoning (optional)
  • 1 small onion, finely chopped
  • 1 small bell pepper, diced
  • 2 cloves garlic, minced
  • 60 ml chicken broth
  • 1 tbsp lemon juice
  • 2 tbsp chopped green onions (for garnish)
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. In a saucepan, bring water, whole milk, and salt to a boil. Gradually whisk in stone-ground grits and simmer for 20–25 minutes until creamy. Stir in butter, cheese, and black pepper.
  2. Season shrimp with salt, pepper, and Cajun seasoning (if desired).
  3. In a skillet, cook diced bacon until crispy (or omit for a lighter version). Remove from pan but leave drippings.
  4. Sauté onion and bell pepper in the skillet for 4–5 minutes until soft; add garlic and cook for another minute.
  5. Add seasoned shrimp and cook until pink (1–2 minutes per side).
  6. Deglaze with chicken broth and lemon juice; stir in bacon if used.
  7. Serve creamy grits topped with the shrimp mixture, garnished with chopped green onions and parsley.
