  • 2 boneless, skinless chicken breasts
  • 1/2 cup buffalo wing sauce
  • 2 oz cream cheese, softened
  • 1/2 cup shredded Monterey Jack or cheddar cheese
  • 8 slices sourdough bread
  • 2 tbsp butter, softened
  • 1/4 cup crumbled blue cheese
  • 1 stalk celery, thinly sliced
  • Fresh spinach or arugula (optional for variation)

Instructions

  1. Cook the chicken breasts in a skillet or grill until fully cooked. Let cool slightly and shred into bite-sized pieces.
  2. In a bowl, mix softened cream cheese with shredded Monterey Jack (or cheddar) until smooth.
  3. Spread the cheese mixture on one side of each slice of sourdough bread. Layer buffalo chicken and sliced celery on four slices, then top with remaining bread slices.
  4. Brush the outside of sandwiches with softened butter. Grill on medium heat for about 3-4 minutes per side until golden and crispy.
