  • 1/2 cup hot buffalo sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup corn kernels (fresh or canned)
  • 1 cup black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/4 cup crumbled cheese substitute
  • 1/4 cup ranch dressing
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Rub the seasoning mixture all over each chicken breast.
  4. Place the seasoned chicken in a baking dish and bake in your preheated oven for 20-25 minutes.
  5. Once cooked through, remove the chicken from the oven and let it rest for a few minutes before slicing into thin strips.
  6. In a large bowl, combine cooked brown rice with corn kernels, black beans, cherry tomatoes, and diced red onion.
  7. Divide this vibrant rice mixture into serving bowls. Top each bowl generously with sliced chicken.
  8. Finish off with avocado slices, crumbled cheese substitute, and drizzle with buffalo sauce.
  9. Add a drizzle of ranch dressing and cilantro for freshness. Serve immediately.
