  • 1 cup powdered sugar, for icing
  • 12 tablespoons milk, for icing consistency

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt; gradually add to wet mixture until just combined.
  5. In a small bowl, mix together brown sugar and cinnamon for the filling.
  6. Roll out the dough into rectangles (3×4 inches), placing filling on half of them before covering with remaining rectangles; seal edges well.
  7. Bake for about 12–15 minutes until lightly golden brown. Cool on wire rack.
  8. For icing, mix powdered sugar with enough milk to reach desired consistency; drizzle over cooled cookies.
