  • 1 lb boneless, skinless chicken breast, cubed
  • 1 large sweet potato, cubed
  • 6 whole cloves garlic
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 teaspoons Italian seasoning
  • 1 round Boursin cheese (5.2 oz)
  • 1 ¼ cup uncooked orzo
  • 1 ½ cup starchy pasta water
  • 3 cups chopped spinach
  • ½ cup shredded parmesan cheese

Instructions

  1. Preheat oven to 425°F and grease a casserole dish.
  2. Roast sweet potatoes and garlic in olive oil, salt, pepper, and Italian seasoning for about 20 minutes.
  3. While roasting, season cubed chicken with remaining spices. Boil salted water for orzo.
  4. After roasting, add chicken and Boursin cheese to the dish; drizzle with olive oil and roast for an additional 15 minutes.
  5. Cook orzo per package instructions; reserve pasta water before draining.
  6. Combine roasted ingredients with cooked orzo and chopped spinach; add reserved pasta water gradually until creamy.
  7. Top with parmesan cheese; broil briefly if desired.
