  • 300 g honeycrisp apples (peeled & cut into small cubes)
  • 15 g lemon juice
  • 106 g dark brown sugar
  • 1 tsp cinnamon
  • ¼ tsp allspice
  • ¼ tsp nutmeg
  • ¼ tsp cloves
  • ¼ tsp ginger
  • ¼ tsp cardamom
  • 1 tsp vanilla extract
  • 28 g unsalted butter
  • 15 g all-purpose flour
  • 4864 oz neutral oil
  • 170 g powdered sugar (sifted)
  • 42 g apple filling sauce (leftover after apples are added to the dough)

Instructions

  1. Warm milk to 110°F and mix with yeast and sugar; let sit until frothy.
  2. Whisk eggs and vanilla together, then combine with yeast mixture.
  3. In a separate bowl, mix flour and salt; gradually add to wet ingredients until combined.
  4. Knead in softened butter until smooth.
  5. Prepare apple filling by cooking diced apples with lemon juice, brown sugar, and spices until softened.
  6. Fold apple filling into risen dough; rest before shaping.
  7. Heat oil to 350°F; fry fritters until golden brown on both sides.
  8. Glaze with powdered sugar mixed with leftover apple filling sauce.
