  • 1/4 tsp salt
  • 1/2 cup fresh blueberries (washed and dried)
  • 11.5 tbsp blueberry jam
  • 3 tbsp butter (for streusel)
  • 2 tbsp brown sugar (for streusel)
  • 2 tbsp granulated sugar (for streusel)
  • 1/3 cup flour (for streusel)
  • a pinch salt (for streusel)
  • a pinch cinnamon (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter, granulated sugar, and brown sugar until smooth.
  3. Add egg and vanilla; mix until well combined.
  4. In a separate bowl, whisk flour, corn starch, baking powder, baking soda, and salt. Gradually incorporate into wet mixture.
  5. Gently fold in blueberries and blueberry jam.
  6. For the streusel topping, combine butter, brown sugar, granulated sugar, flour, salt, and cinnamon until crumbly.
  7. Scoop cookie dough onto the prepared baking sheet and sprinkle with streusel topping.
  8. Bake for approximately 13 minutes or until golden around the edges.
