  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1/2 cup Greek yogurt
  • 1 ½ cups fresh blueberries (divided)
  • 6 oz cream cheese
  • 1 tablespoon flour (to toss the blueberries)
  • 3 tablespoons granulated sugar (for cream cheese filling)
  • 1 teaspoon corn starch (for cream cheese filling)
  • ¾ cup powdered sugar (for glaze)
  • 1 ½2 ½ teaspoons milk or cream (for glaze)

Instructions

  1. Preheat oven to 425°F and line a cupcake pan with paper liners.
  2. Toss half of the blueberries with flour to prevent sinking.
  3. Mix dry ingredients (flour, baking powder, salt) in one bowl and wet ingredients (egg, sugars, yogurt, oil) in another.
  4. Combine both mixtures gently until just blended; fold in tossed blueberries.
  5. Prepare cream cheese filling by mixing cream cheese with sugar and cornstarch until smooth.
  6. Spoon muffin batter into liners, add cream cheese filling, then top with remaining blueberries and streusel crumb topping.
  7. Bake at 350°F for about 22-25 minutes or until golden brown.
