  • 3 pounds boneless chuck roast
  • 3 teaspoons kosher salt
  • ½ teaspoon black pepper
  • 1 medium yellow onion, finely chopped
  • 1 large carrot, diced
  • 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 3 cups apple vinegar
  • 4 teaspoons beef bouillon
  • 2 tablespoons extra-virgin olive oil
  • 8 ounces cremini mushrooms, halved
  • 8 ounces pearl onions, peeled (or frozen, thawed)
  • Mashed potatoes, for serving (optional)
  • Chopped fresh flat-leaf parsley, for garnish

Instructions

  1. Preheat your oven to 350°F. Season the beef cubes with salt and pepper.
  2. Cook chopped bacon in a Dutch oven until crispy; set aside while keeping the fat in the pan.
  3. Brown the seasoned beef in batches until caramelized on all sides.
  4. Sauté onion and carrot in the same pot until softened; add garlic, tomato paste, bay leaf, and thyme.
  5. Deglaze with apple vinegar, stir in bouillon and water, then return beef and bacon to pot.
  6. Cover and roast in the oven for about 2½ hours until beef is tender.
  7. In a separate skillet, sauté mushrooms and pearl onions until browned; add them to the stew before serving.
