  • 6 whole scallions (thinly sliced)
  • 16 ounces frozen corn kernels (or 3 cups fresh)
  • 1 teaspoon Tajin or seasoning blend
  • 4 ounces reduced-fat cream cheese
  • ¼ cup light sour cream
  • 7 ounces Cotija cheese (grated)
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F.
  2. In a skillet, heat olive oil over medium heat; sauté white and light-green scallion parts for 2-3 minutes.
  3. Stir in corn and Tajin; cook until corn softens (about 3-5 minutes).
  4. Remove from heat, fold in cream cheese, then mix in sour cream and ¾ cup Cotija.
  5. Bake for 10-12 minutes until bubbly; broil for an additional 2-3 minutes after adding remaining Cotija on top.
  6. Garnish with reserved scallion greens and cilantro; serve hot.
