  • 12 oz Brussels sprouts (trimmed and halved)
  • 8 oz bow tie pasta
  • 12 oz cooked smoked sausage (chicken or turkey sausage recommended)
  • 5 cloves garlic (minced)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt (to taste)
  • Pepper (to taste)
  • 1/4 teaspoon smoked paprika (to taste)
  • Fresh thyme (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C). On a baking sheet, toss butternut squash with olive oil, salt, and pepper; roast for 25–30 minutes until tender.
  2. On another baking sheet, drizzle Brussels sprouts with olive oil and season with salt and pepper; roast alongside the squash for added flavor.
  3. Cook bow tie pasta in boiling salted water until al dente; reserve half a cup of pasta water before draining.
  4. In a large skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add the cooked sausage until heated through.
  5. Combine roasted vegetables and pasta in the skillet; pour in reserved pasta water as needed. Stir in butter, smoked paprika, salt, pepper, and fresh thyme.
