  • 23 teaspoons Cajun seasoning
  • 1 tablespoon avocado oil
  • 8 tablespoons unsalted butter
  • ½ cup all-purpose flour
  • 1 large onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 stalks celery
  • 6 cloves garlic
  • 3 cups chicken broth (warmed)
  • Fresh parsley for garnish

Instructions

  1. Prep your veggies: finely chop onion, bell peppers, celery, green onions, and parsley; mince the garlic.
  2. Season chicken thighs with Cajun seasoning.
  3. Heat oil in a large skillet; sear chicken thighs for 3-5 minutes per side until browned.
  4. In the same skillet, reduce heat and melt butter; whisk in flour to make a roux until medium brown (10-15 minutes).
  5. Add chopped veggies to roux; sauté for about 10 minutes until softened, then stir in garlic for another minute.
  6. Gradually whisk in warmed broth and browning sauce; add chicken back to skillet and simmer on low for about 30 minutes.
  7. Chop chicken into bite-sized pieces, return to stew, stir in parsley, adjust seasoning if needed.
