  • 4 boneless chicken breasts
  • 1 lb fresh asparagus (cut into 1-inch pieces)
  • 3 cups cubed potatoes (½-inch sides)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tsp fresh thyme leaves
  • ½ tsp paprika
  • 1 cup sharp cheddar cheese (shredded)
  • Salt and pepper (to taste)
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet over medium-high heat, cook diced bacon until crispy; drain but reserve some fat.
  3. Sauté chopped onion in the reserved fat for about 5 minutes; add minced garlic and cook another minute.
  4. Season chicken breasts with salt and pepper, then sear in the skillet until golden brown on both sides.
  5. Combine heavy cream and chicken broth in the skillet; whisk in thyme and paprika, simmering until slightly thickened.
  6. Layer half of the cubed potatoes in the baking dish, season with salt and pepper, followed by asparagus, half of the bacon, seared chicken, cream sauce, remaining potatoes, and bacon.
  7. Top with shredded cheddar cheese, cover with foil, and bake for 25-30 minutes; remove foil and bake an additional 15-20 minutes until golden brown.
  8. Allow to rest for 5 minutes before serving.
