  • 200g rice noodles
  • 1/2 cucumber, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 medium carrot, grated
  • 2 green onions, finely chopped
  • 1/4 cup fresh cilantro, roughly chopped
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup crushed peanuts (lightly toasted)
  • 1 tablespoon fresh grated ginger
  • 3 tablespoons lime juice
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil (optional)

Instructions

  1. Cook the rice noodles according to package instructions until tender. Rinse under cold water and drain.
  2. In a bowl, whisk together ginger, lime juice, soy sauce or tamari, honey or maple syrup, and sesame oil.
  3. Chop the vegetables: slice cucumbers and bell peppers, grate the carrot, and chop green onions and herbs.
  4. In a large bowl, combine drained noodles with vegetables and herbs. Pour the dressing over everything and toss gently.
  5. Serve topped with crushed peanuts for added crunch.
