  • 2 ½ pound butternut squash
  • 1 tablespoon extra virgin olive oil
  • ½ pound chicken sausage
  • ½ onion, diced
  • 3 garlic cloves, minced
  • 2 cups baby spinach
  • 1 apple, cored and diced
  • Fresh sage (finely chopped)
  • Fresh rosemary (finely chopped)
  • ⅓ cup dried cranberries
  • ¼ cup pecans (roughly chopped)

Instructions

  1. Preheat oven to 400°F (200°C). Halve the butternut squash lengthwise and scoop out seeds.
  2. Drizzle cut sides with olive oil and season with salt and pepper. Place cut side down on a baking sheet and roast for 40-45 minutes until tender.
  3. In a pan over medium heat, brown the chicken sausage. Add onion, garlic, and spinach; stir until wilted.
  4. Mix in diced apple, sage, rosemary, cranberries, and pecans; cook until apple softens.
  5. Once the squash is roasted, scoop out some flesh from the center and mix it into the filling.
  6. Stuff each half of the squash with the mixture, broil for about 5 minutes until golden brown.
