  • 150 g granulated sugar (divided)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 600 ml milk (whole, skimmed, lactose free, or plant-based)
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Prepare the Apples: Peel and thinly slice the apples. Combine with 150 g sugar, salt, and cornstarch.
  2. Cook the Apples: In a saucepan over medium heat, cook the apple mixture for about 20-25 minutes until softened and caramelized.
  3. Make the Vanilla Custard: Whisk egg yolks with cornstarch. Heat milk with remaining sugar, salt, and vanilla bean paste until warm but not boiling. Slowly mix into egg yolks while whisking.
  4. Thicken the Custard: Return the mixture to low heat and stir continuously until thickened (5-10 minutes). Cool slightly.
  5. Assemble: In a mold, layer cooked apples followed by custard until all ingredients are used. Finish with custard on top.
  6. Chill: Refrigerate for at least an hour before serving.
