  • 125 g butter (room temperature)
  • 225 g granulated sugar
  • 3 eggs (room temperature)
  • 225 g sour cream (14-18% room temperature)
  • 40 g vegetable oil (e.g., canola oil)
  • 1 1/2 tsp vanilla extract
  • 125 g powdered sugar
  • 1 tbsp maple syrup
  • 1 tsp sour cream
  • 1/2 tsp vanilla extract
  • 12 tsp water

Instructions

  1. Prepare the apple filling by dicing the apples and mixing them with granulated sugar and cinnamon.
  2. Make the crumb topping by combining flour, dark brown sugar, and cinnamon; cut in room-temperature butter until crumbly.
  3. For the cake batter, whisk together dry ingredients. Cream butter and sugar, then add eggs one at a time along with sour cream, oil, and vanilla. Combine with dry ingredients.
  4. Assemble by pouring half the batter into a greased pan, layering on the apple mixture, topping with remaining batter, and sprinkling on the crumb topping.
  5. Bake in a preheated oven until golden brown (about 70 minutes). Cool before drizzling with maple glaze.
