  • ⅓ cup packed brown sugar (for streusel)
  • ¼ cup old-fashioned oats (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ teaspoon salt (for streusel)
  • ¼ cup cold unsalted butter (cubed, for streusel)
  • 8 oz. cream cheese (softened)
  • ¼ cup unsalted butter (softened, for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together flour, brown sugar, oats, cinnamon, and salt for the streusel topping. Cut in cold butter until crumbly; refrigerate.
  3. In another bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter and sugar until light; add eggs one at a time and mix in vanilla.
  5. Alternate adding dry ingredients and milk to the butter mixture until just combined. Fold in diced apples gently.
  6. Fill muffin cups two-thirds full with batter; sprinkle streusel on top.
  7. Bake for 22-25 minutes until golden brown; cool before frosting with cream cheese mixture.
