Ingredients

Scale
  • 34 lbs turkey breast (bone-in or boneless)
  • 2 cups apple cider
  • 4 tbsp butter
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic (minced)
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the turkey breast dry and season generously with salt and pepper.
  2. In a skillet, melt 2 tbsp of butter over medium-high heat. Sear the turkey on all sides until golden brown, about 3-4 minutes per side.
  3. Transfer the turkey to a roasting pan. Pour in 1 cup of apple cider to keep it moist during roasting.
  4. In a saucepan, combine the remaining apple cider, brown sugar, vinegar, mustard, garlic, cinnamon, and cloves. Simmer until reduced to a syrupy consistency (about 10-15 minutes).
  5. Brush the turkey with the glaze and roast for about 1.5 to 2 hours, basting every 15 minutes until the internal temperature reaches 165°F (74°C).
  6. Let the turkey rest for 10-15 minutes before carving.
